This dish is one of the reasons I love summer. As soon as Niagara peaches are in season, I’m itching to make it. It’s a wonderful salad of corn, grape tomatoes, and basil dressed with a lime-based vinaigrette and topped with peaches and grilled shrimp. The original recipe called for scallops, which pair better with the salad because of their inherent sweetness, but I’m on sabbatical and thus, watching my budget.
